Menu with Local Ingredients

Kaga regional cuisine : Jibuni (Duck Stew)

"Jibuni" is one of the popular regional dishes in Kanazawa, mainly made with braised duck filet, seasonal Kaga vegetables and wheat flour.

Nodoguro (Rosy Seabass)

Nodoguro, a fish unique to the Sea of Japan has soft and fat-rich meat, is becoming well known as a high-class fish. It is recommended to have it grilled if you want to enjoy the rich flavor of fish itself.

Kanazawa Oden

Our Kanazawa Oden is made of different ingredients stewed in local Ono soy sauce based soup. We use ingredients which are unique to Kanazawa, such as Kuruma-bu (wheel-shaped seitan), whelks and Kaga vegetable (white radish).

Wheel-shaped wheat gluten bread with egg

To bring out the full flavour of the wheel-shaped wheat gluten bread of Kaga, this menu is lightly flavored with egg.

Homemade tofu in a bamboo cup

Our silky homemade tofu is made from soy milk (from Kaga and Noto region) and bittern (from Wajima). It is carefully made one by one in a way that enhances the rich flavor of soy beans to the fullest.

Saba Heshiko (Fermented mackerel)

Heshiko is a preserved food made by marinating mackerel in salt and rice bran.
Enjoy the "Saba Heshiko" with grated white radish.

Take the Joetsu Expressway from Oizumi junction. Take exit at Kanazawa East Interchange and go toward Kenrokuen Garden, turn right at Higashiyama intersection, continue straight and turn right at Otemachi intersection.

Take the Meishin Expressway from Suita Junction. Take Hokuriku Expressway from Maibara junction and go toward Kenrokuen from Kanazawa West Interchange. Turn left at Kenrokuen Garden intersection, continue straight and turn right at Otemachi intersection
